Blueberry pancakes you won't need to spread Nutella on!




It's summer, but my innate desire for sweets never goes on vacation.
But even I can't always bear to always spread them with chocolate as I usually do.
Also from time to time I feel the impulse to eat healthy...
So I thought of modifying my usual recipe for quick pancakes by adding blueberries into the dough, and from there I took a variation on the recipe.

This is a recipe for one/two people (depending on how much you eat!), perfect for when you want some but don't want to spend the day cooking or to have leftovers.


Ingredients:

-50 g flour
-3 tablespoons of baking powder
-Cane sugar to taste
-Two tablespoons of cinnamon
-35 ml milk (any milk, also vegetable one; personally I recommend almond)
-1 egg
-2 tablespoons of mascarpone or margarine (or yogurt if you want it lighter)
-1 tablespoon of honey (or blueberry jam)
-125 g of blueberries cut into small pieces



How to make it


1. Mix dry ingredients (flour, baking powder, sugar, cinnamon and blueberries) into a bowl.
2. In another bowl mix the remaining ingredients
3. Pour into container with dry ingredients



4. Stir well to avoid lumps (especially from mascarpone). The ideal consistency is slightly denser than the classic one of the crepes (pours well from the spoon, but it is not completely liquid).
5. Prepare a pan with butter (I personally remove excess butter with a napkin), adding it before the frying pan gets too hot to prevent it from burning. Let the pan reach hot temperature and leave it on medium heat.
6. Take a tablespoon of dough, and pour it into the center of the pan, turning only when, approaching it with the spatula, it is possible to pass underneath without the dough sticking to the spatula, or when it begins to bubble on the surface.
7. Serve without anything!Or if you can't resist, with chocolate, maple juice, honey, jam...)
